If you have a 180 degree thermostat you want to get the low and high speed fan turn on temps changed or you will have a wide variation of temps.
I used the stock 197 until I got a tune and went with the 180. With the temps in the 110s it still runs at 212 but when it isn't quite so hot it will run closer to 180. When I tried the lower temp thermostat prior to the tune there was always wierdness watching my temp gauge go up quickly then drop, I was always worried.
I fully plan on getting a tune right after the swap... like I've said its a slow process of getting parts and cash. I was really curious what vehicle had a 180 stat that I could go up to the parts guy and ask for. Thanks all!
