I had this issue on my cougar once, prob a diff type of sensor mine just drops in but after cleaning it well it has been fine since.

Could also try cleaning it out before replacing it. Bleach, water, and some small rocks. I kid you not.
When I saw this I remembered something...My 95 Cougar had slime in the cooling system. I removed the tank and used a mixture of pea gravel and the purple cleaner. I didn't think of telling this guy to do that. Ok, I'll shut up now.

maybe i'm just confused. on my tbird there was a full hot and a full cold, on this one there's only a full cold level. it is below the full cold level, so maybe i really am low on coolant.

Just that bit low I don't think would cause the sensor to activate, I would do like the above guys said and clean the tank and senor good then fill her back up, I had the same issue on the wife's Taurus done like the above peps said works great now :)
