oil shearing down to a thinner grade:
for ex., a 10w-40 might shear down to a 10-30 weight in 3000 or more miles, thus losing viscosity(thickness) and the ability to protect.
Main causes of shearing down: high temps and friction.
As someone already stated, additive and detergent package will deteriorate over time/use---> no protection/correct thickness.
Also: an oil can get thicker than the starting viscosity by not getting warm enough(short trips), collecting moisture, and this turning in to sludge(for ex. a 5w-30 will have a X-40 thickness)
also: not changing--->consumption continues--->no oil at some point-->engine melts
